Spinach Rice Pilaf (Spanakorizo)
Ingredients
1/4 cup olive oil
1 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup uncooked long grain rice
1/2 cup tomato sauce
1 cup water
salt to taste
pepper to taste
1 lb. spinach, cut into 1-inch pieces
1/4 cup finely chopped parsley
Directions
Using a deep saucepan, saute the onion and celery in the olive oil. Add the rice and saute for a few minutes. Add the tomato sauce, water, salt and pepper. Simmer for 10 minutes, stirring occasionally.
Add the spinach and parsley. Cover and simmer for 15 minutes or until the rice is cooked and the liquid has been absorbed. If necessary, add a little hot water during the last 10 minutes of cooking. Makes 4 servings.
