Thai Turkey or Chicken Salad
Ingredients
4 cups shredded cabbage
2 cups grated carrots
1/2 cup onion, finely chopped
2 cups cooked turkey or chicken, shredded
1 large jalapeno chile, seeded, deveined and chopped
1 cup fresh mint, coarsely chopped
1 tsp. toasted sesame oil
1 tbsp. rice wine vinegar
1/4 cup olive oil
1/4 cup lime juice, freshly squeezed
lime wedges for garnish
1/2 cup peanuts, chopped and roasted
Directions
Combine the shredded cabbage, grated carrots and chopped onion in a large serving bowl. Scatter the shredded chicken or turkey over the top.
Combine the chile and mint in a bowl. Add the sesame oil, rice wine vinegar, olive oil and lime juice. Mix well and season to taste with salt and pepper. Drizzle this dressing over the salad and toss. Scatter the peanuts over the top. Serve with lime wedges and bread if desired. Serves 4.
