Thanksgiving Potato Cake

Ingredients
3 lbs. potatoes
1 tbsp. olive oil
3 tbsp. butter
3 large eggs, beaten
1 egg yolk for glaze
1/4 cup parmesan cheese, finely grated
1 tsp. salt
1 tsp. ground pepper
fresh chives, chopped

Directions
Preheat oven to 400 degrees F. Rub potatoes with olive oil then season with salt and pepper. Place the potatoes on a cookie sheet and bake until soft, about 45 minutes. Allow to cool a bit.

Peel the potatoes, cut into pieces, then mash finely with a potato ricer or masher. Add the butter and stir until just combined. Add the beaten eggs, parmesan cheese, salt and pepper.

Grease a springform pan or a 9x13-inch glass baking dish. Pour the potato mixture into the pan then brush the top with the egg yolk. Place in the oven and bake for 40 to 50 minutes, until puffy and firm.

Garnish with chopped fresh chives to serve. Makes 8 servings.
