Turkey White Chili
Ingredients
2 tbsp. olive oil
1 tsp. garlic, finely chopped
1 cup onion, finely chopped
2 cans (4 oz. each) chopped green chiles
2 tsp. ground cumin
1-1/2 tsp. dried oregano
1/8 tsp. ground cloves
1/4 tsp. cayenne pepper
3 cans great northern white beans (or white beans of choice), well rinsed
6 cups chicken broth
4 cups diced cooked turkey meat
salt to taste
pepper to taste
jack cheese, shredded, for garnish
sour cream for garnish
olives for garnish
tomatoes, diced, for garnish
cilantro for garnish
green onions, chopped, for garnish
Directions
Heat the oil in a medium size heavy skillet over medium-high heat. Add the garlic and onion and cook, stirring until transparent, about 5 minutes. Add the chiles, cumin, oregano, cloves and cayenne. Mix thoroughly.
Stir in the white beans and broth. Season to taste with salt and pepper. Add the turkey and continue to simmer for 45 minutes. Serve in heavy, deep bowls with choices of garnishes. Serves 8.
