Vegetable Paella
Ingredients
1 tbsp. olive oil
1 cup chopped onion
1 red bell pepper, chopped
1 cup sliced mushrooms
1 tsp. minced garlic
2 pkgs. (5 oz. each) yellow rice (Spanish style rice)
1 cup chopped tomatoes
1 can (15 oz.) black beans, rinsed and drained
1 pkg. (10 oz.) frozen peas, thawed
1/2 tsp. paprika
1 tsp. dried basil leaves
Directions
In a large non-stick pot, heat the oil and saute the onion, pepper, mushrooms and garlic for 5 to 7 minutes. Add the rice and the amount of water specified on the rice package. Bring to a boil. Reduce heat, cover and cook for 20 to 25 minutes or until the rice is done. Stir in the remaining ingredients and cook until heated through. Makes 8 servings.
