Whipped Sweet Potato Bake
Ingredients
1 can (40 oz.) yams or sweet potatoes
1/4 cup butter or margarine, melted
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
3 cups miniature marshmallows
Directions
Preheat oven to 350 degrees F. Lightly grease a 1-1/2 quart baking dish.
Using an electric mixer on medium speed, beat the sweet potatoes, butter, cinnamon, salt and nutmeg in a medium size mixing bowl until well blended. Spoon the mixture into the baking dish and top with the marshmallows.
Bake at 350 degrees for 15 to 20 minutes or until the mixture is thoroughly heated and the marshmallows are lightly browned. Makes 10 servings.

Alternately, you can use your microwave. Mix all ingredients except the marshmallows as directed above. Spoon into a microwave safe baking dish. Microwave on the high setting for 8 to 10 minutes or until the mixture is thoroughly heated, stirring after 5 minutes. Top with the marshmallows and allow to stand until the marshmallows begin to melt, about 2 to 3 minutes.
