Whole Bran Muffins
Ingredients
1 cup flour
1 tbsp. baking powder
3/4 tsp. salt
2 tbsp. sugar
2 cups whole bran
1-1/4 cups milk
1 egg, beaten
1 tbsp. butter or margarine, melted
Directions
Preheat oven to 400 degrees F. and grease 12 muffin cups.
Stir together the flour, baking powder, salt and sugar. Set aside. Soak the bran in milk in a mixing bowl for 5 minutes. Add the egg and butter to the bran mixture, then add the flour mixture, stirring just to moisten. Fill the 12 muffin cups 2/3 full.
Bake at 400 degrees F. for about 25 minutes.
