Yesterday's Roast Beef Stroganoff
Ingredients
2 cups diced cooked beef
1 can (4 oz.) sliced mushrooms
1-1/2 cup Burgundy wine
3/4 cup finely chopped onion
1/2 tsp. paprika
1/8 tsp. garlic powder
1 tsp. salt
1/2 cup sour cream
parsley or chives, chopped
hot cooked rice or noodles
Directions
Drain the mushrooms into a measuring cup and add water to make 1/2 cup of liquid. Combine with beef, wine, onion, paprika, garlic powder and salt.
Cover and simmer for 30 to 40 minutes. Blend in the sour cream and herbs then heat. Serve over hot cooked rice or noodles. Serves 4.
