Zucchini Pasta
Ingredients
1 pkg. (16 oz.) dry pasta
6 small zucchini, diced
20 cherry tomatoes, halved
1/2 cup fresh oregano leaves, torn in pieces
1/2 cup extra-virgin olive oil
salt, to taste
1/4 cup reserved pasta water
Parmesan cheese, freshly grated, to taste
Directions
Cook pasta according to the directions on the package.
Mix zucchini, tomatoes, oregano leaves and olive oil in a large mixing bowl. Salt to taste.
When the pasta is done, drain and mix with the zucchini sauce and reserved pasta water. Top with Parmesan cheese and serve. Serves 4.
